Recipe from Nigella Express

I think this is one of my most cooked recipes from the Nigella Lawson back catalogue, probably after the Choc Chip Chilli.
I first saw this one on the Nigella App that was released many years ago, it was one of a handful of recipes that were given a video tutorial on how to cook, so naturally I attempted to follow this as Nigella-ly as I do after watching her TV shows, and somehow, I still can’t make this as Express-ly as she does. (I blame editing).
The curry however is pretty quick and easy to make, it’s a one pot affair which is always a bonus in my book (washing up is always a chore when your dishwasher is your own two hands). I flit between using chicken breast or thigh when making this. I did use thigh after the meal wheel landed on this one as thems the rules, and I agree that the chicken is much juicer and tender than breast meat cooked this way.
I enjoy this curry too as it’s not a spicy one for me, I’m not a fire-eater, so hot foods often worry me somewhat, but the Curry Paste is offset with the coconut milk and just provides a great flavour. This is one I often batch cook and freeze or chill to enjoy later in the week.
