Courgettes were one of the vegetables that I hated when I was younger, I expected the freshness of cucumber but got flavourless mush. It took me years to come around to it but I am now a proud courgette appreciator.
I always feel I’m being that little bit better to myself when I add a courgette to a recipe, it does after all add another to my 5-a-day.
This accompaniment of griddles courgettes is a super simple side that can be created during the final minutes of your main cooking or resting. Courgette’s still seem fairly flavourless to me when compared to other veg, so the addition of lemon juice and salt to the slices adds a tasty punch and crunch here (it is chunky Maldon salt flakes that are used here).
I love the char marks that you get when using the griddle, it’s like you’re making, then consuming, your own work of art.
