Week 31: Spiced Chicken Escalopes with Watercress, Fennel & Radish Salad

I’m always pleased when I’m able to try new things and this week I was able to use my mandoline for the first time (yes Mum, I was very careful). It allowed for incredibly thin radish and fennel slices, they were almost transparent. Yes I was pleased to try the machinery for the first time, but the fennel? Not so much.

I like radishes, I like watercress, but I abhor aniseed and the taste of the fennel alone really didn’t hit right. The limey dressing was the saviour here and eating the salad alongside the spiced chicken, it become quite manageable. No crumbs of leaves left.

The chicken itself coated in it’s turmeric, ginger and cayenne pepper glaze provided heat on the tongue without being overwhelming. And the colour that the turmeric turns the meat, you might need sunglasses when eating this one!

Would eat again, fennelless.
