I’ve mentioned before how I don’t have a fishmonger nearby (in fact it was during the last scallop recipe), and I had to get mine frozen from the supermarket. There is no way I’d find scallop shells from the market but thankfully was able to order some on the internet (an online order I didn’t think I’d ever need to make).
These are ridiculously simple to make, and also great as a speedy starter. I served these to my friends who hadn’t had scallops before so not only was I hoping they were nice, I was also very much hoping no one was allergic, but thankfully everyone seemed fine, and indeed really enjoyed the recipe. The lime and garlic oil add the flavours here to the scallops, and these are definitely on the list to make again. I need to get my moneys worth on those shells after all!
