Week 9: Strapatsada


Recipe from Simply Nigella.

This is basically scrambled eggs with tomatoes, and from the book titled Simply Nigella, it really is simplest supper recipe I have tried yet. 

It’s a Mediterranean style dish and I was lucky enough to eat this out on my terrace, on a very sunny evening, feeling like I could be in an Italian village (it’s the things we have to think about when we’re locked down in the UK, unable to travel). 

It’s so easy… fry up some tomatoes, add a couple of extra little bits and crack in two eggs, stir it up, dollop on toast, or aside some thickly sliced bread, and enjoy! 

I melted in some of the Manchego cheese leftover from my Avacado Quesadillas, and sprinked with some thyme leaves (picked fresh from the terrace I’ll have you know!). 

It’s a super simple recipe, very quick, and very satisfactory.
