We love simplicity and ease, and this recipe that contains only four ingredients delivers not just on the simple side, but on taste too. I went out of my way to buy Manchego cheese, used here because it melts well, but other cheese can be used. One thing I enjoy about this “cooking new things” project is that I get to exercise my Googling fingers too… I had to ask what Manchego is and how it came to be… “Manchego? No man, Che over there!”. (Sorry).
In case you’re wondering, Manchego is a cheese made in the La Mancha region of Spain, from the milk of the Manchega breed of sheep. Retain that for a pub quiz, it will be asked.
This really is as simple as adding sliced cheese and cubed avcocado and a few chilli slices into a tortilla wrap, and heating it on a griddle as the cheese melts. I had to make a few of this chilli pepper-less as I knew the eaters (me and one friend) are delicate of tongue and would not be best pleased with the heat of jalapeños. I did manage to eat a couple, but after a few drinks when I was feeling slightly braver… I do feel the Sunday hangover was more caused by eating the peppers than the three bottles of wine but who’s to say.
A very simple, tasty snack for a group to enjoy… would make again and maybe (again, after a few drinks) even enjoy a game of Russian roulette of which slices contain the peppers that’ll burn a hole in my tongue.
